Our Story
Green Light Bakery is a cottage food bakery registered with the state of Minnesota. The owner, Casey, was diagnosed with celiac disease in 2009 and she’s been baking ever since. Although there are many, many more gluten free options than when Casey was first diagnosed, she’s convinced there’s still room for innovation and improvement! Green Light Bakery combines fresh, seasonal ingredients and years of experience to create the gluten free treats you’ve been searching for.
All Green Light Bakery products are made in small batches out of a home kitchen in Minneapolis. Baked goods are primarily available at pop-up events for now. In the future, we hope to offer monthly pre-orders and pickups. Follow our Instagram for the most up-to-date information!
If you’re curious about the bakery’s name, its origins are twofold. First, it signals permission to those who can’t eat gluten: Yes, you have the green light—you can eat this! It’s also a winking reference to Fitzgerald’s The Great Gatsby and the longing that Daisy’s green light symbolizes for Gatsby. Anyone who can’t have gluten knows that longing, whether it’s standing outside a Paris patisserie or browsing the aisles of a grocery store. Our hope is to bake treats and savory items that evoke, for everyone, “Gatsby’s wonder when he first picked out the green light at the end of Daisy’s dock.”
